skillet Biscuits *My camping recipe
2 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon salt
1⁄4 cup margarine (I use butter)
1 cup milk
1⁄4 cup margarine (for frying)
DIRECTIONS
Combine dry ingredients.
Cut in margarine with a fork, pastry cutter, or your fingers.
Stir in milk.
Form dough into 12 biscuits.
Melt 2 tablespoons margarine in an iron skillet over medium/low heat.
Fry half of the biscuits for about 6 minutes on each side, and drain on paper towels.
Repeat with 2 more tablespoons of margarine and remaining dough.

Puertorican Rice and eggs
1 egg
1 cup leftover Puertorican rice
1 T butter
Grease pan with butter or bacon grease. Throw a large spoonful... like 1/2 cup to 1 cup leftover rice on the pan, cook for 5 min to soften rice. Make the rice into a well..or a doughnut shape and crack the egg in the middle. Let cook for a bit until most of the white is cooked,then flip.cook to desired doneness, All done! So easy and Soo good!!

Brunch Egg/Bacon Cups
Serves 6
Ingredients:
Pam
package refrigerated biscuits
3 slices bacon
mixed cheese shredded
6 large eggs
Coarse salt and ground pepper
Hollandaise sauce (in blog)
Directions:
Preheat oven to 375 degrees. Lightly spray Pam on 6 standard muffin cups. Cut biscuits in half and with a rolling pin, flatten biscuits into a round shape and push into muffin cups. crating a shell. lightly sprinkle with tsp. mixed cheese in each cup. In a large skillet, cook bacon over medium, until almost crisp, 4 minutes, flipping once. (It will continue to cook in the oven.) Lay 1/2 bacon slice in each bread cup and crack an egg over each. Season with salt and pepper. Bake until egg whites are just set, 20 to 25 minutes. Run a small knife around cups to loosen toasts. Serve immediately with Hollandaise sauce.
Easier Hollandaise sauce
Ingredients:
3 large egg yolks
Juice of 1 lemon or 1/4 cup water
1/4 teaspoon white pepper
1 stick melted butter
Directions:
Place the top of a double boiler or a heatproof bowl over a pan of hot water on low heat. whisk yolks, lemon juice, in double broiler over med heat, slowly drizzle in hot butter. keep warm over very low heat, whisking occasionally. Do not allow mixture to get too hot, or it may curdle.

Julia Child's Scrambled eggs w/ham
2 T Butter
8 eggs
4 teaspoons water
salt and pepper
cut up ham
2 T cream or butter
Beat eggs in a bowl with the seasonings ad liquid for 20 to 30 seconds, just to blend yolks and whites.
Smear bottom and sides of 7 inch nonstick pan with the butter. add ham and cook for a bit to soften meat. Pour in the eggs and set over moderately low heat. Stir slowly and continually, reaching all over the bottom of the pan. Nothing will seem to happen for 2 to 3 minutes as the eggs gradually heat. Suddenly they will begin to thicken into a custard. Stir rapidly, moving pan on and off the heat, until the eggs have almost thickened to the consistency you wish. then remove from the heat, as they will continue to thicken slightly.
Just as soon as they are of the right consistency, stir in the enrichment butter or cream, which will stop the cooking. Season to taste, turn out into platter, serve.

Pumpkin Pancakes with apple syrup
I found this recipe online and it was soo yummy! definitely a keeper!
Ingredients:
* HOT CIDER SYRUP:
* 3/4 cup apple cider or apple juice
* 1/2 cup packed brown sugar
* 1/2 cup corn syrup
* 2 tablespoons butter or margarine
* 1/2 teaspoon lemon juice
* 1/8 teaspoon ground cinnamon
* 1/8 teaspoon ground nutmeg
* PANCAKES:
* 1 cup all-purpose flour
* 1 tablespoon sugar
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1/2 teaspoon ground cinnamon
* 2 eggs, separated
* 1 cup milk
* 1/2 cup cooked or canned pumpkin
* 2 tablespoons vegetable oil
Directions
1. In a saucepan, combine the syrup ingredients. Bring to a boil over medium heat, stirring occasionally. Reduce heat; simmer, uncovered, for 20-25 minutes or until slightly thickened. Let stand for 30 minutes before serving.
2. For pancakes, combine the dry ingredients in a bowl. In another bowl, whisk the egg yolks, milk, pumpkin and oil. Stir into dry ingredients just until moistened. In a mixing bowl, beat the egg whites until soft peaks form; fold into batter.
3. Pour batter by 1/4 cupfuls onto a hot greased griddle. Turn when bubbles form on top of pancakes. Cook until second side is golden brown. Serve with the syrup.

Tomato and Basil Egg Sandwich
I just happened to have Tomato and Fresh basil on hand so I warmed them on the grill for my everyday egg sandwiches that I make on busy mornings. They turned out sooo yummy!! Hubby was very impressed
1 english muffin, crusty bread, or bagel, split and toasted
1 egg, fried
grated or sliced mozz cheese
2 large fresh basil leaves..slightly warmed/grilled
2 or 3 slices roma tomato..slightly warmed/grilled
1 slice bacon, cut in half
combine to make a breakfast sandwich!!

Breakfast Burritos
This is something I developed - super easy and it is my kid's favorite.
8 flour tortillas - I'm very picky about the brand (guerrero)
2 TB butter
about 8-9 eggs
salt and pepper
1 cup shredded cheese (I use a mixed cheese)
4 strips bacon
cut bacon in half/lengthwise. Fry bacon up. Mix eggs with whisk in a bowl and in a separate fry pan drop butter and when melted,scramble eggs. Salt and pepper to taste. Turn off heat when eggs reach a soft scramble and sprinkle with the cheese. cover so cheese melts while warming tortillas. Warm tortillas on a flat pan surface. (1 at a time)
Assembly:
1 warmed tortilla
scoop eggs and cheese
1 (1/2) slice bacon
wrap into burrito
repeat till all burritos are made
variations:
some times I will cook potatoes alongside the bacon and add it into burritos, also you can use sausage instead of bacon. I just cook sausage first in the frying pan and then add the eggs to scramble it all together,top w/cheese...etc.

1.5 c. milk

2 ripe bananas, chopped
COCONUT SYRUP:
1 c. sugar
1/2 c. water

1 tsp. coconut extract
FOR PANCAKES: add chopped bananas to bisquick recipe for pancakes
FOR SYRUP: Combine sugar, water, cornstarch and butter and bring to a boil; boil 5 minutes. Remove from heat and stir in flavoring. Serve over warm pancakes.

Biscuits and Sausage Gravy with Scrambled Eggs
My dear friends Vangie, Sarah, and Christy came to my house and made this for me once when I was really sick. And It was soooo good. I make this all the time for my family now - it's our new late sunday morning breakfast
1 pound bulk sausage
1/4 cup butter
1/4 cup flour
2 or 3 cups milk
salt and pepper
fry up sausage in large fry pan on med heat till cooked through, push sausage to one side of pan. Melt butter on empty side and add flour. mix butter and flour to form a paste or Rue. Then add milk. Stir entire mixture constantly to dissolve Rue and heat to a boil to thicken. Add salt and pepper to taste

Mexican Sausage and Egg bake
This is one egg caserole that you don't have to prepare the night before. yummy
12 oz bulk spicy or regular sausage
5 cups frozen southern style hash browns
1 can chopped green chiles
2 cups shredded jack cheese
12 eggs
1/2 cup milk
salt
Cook sausage, combine ingredients, pour into greased casserole dish, then bake at 350 for 60 minutes uncovered, until eggs are set.

1 medium, ripe banana (mashed)
1/4 cup chopped pecans
Beat egg, add remaining ingredients in order listed. beat with rotary beater until smooth. Greased heated griddle. make pancakes. makes about 10

Blueberry French Toast
This was a recipe from Jerralee my sister..she got it from Taste of Home Magazine. It's a yummy company or holiday breakfast. I made this once for my friend's baby shower brunch with rave reviews. Very rich and yummy.
12 slices day old white bread
2 packs (8 oz) cream cheese
1 cup fresh blueberries
12 eggs
2 cups milk
1/3 cup maple syrup
Blueberry Sauce
1 cup sugar
2 tablespoons corn starch
1 cup water
1 cup fresh or frozen bluebarries
1 Tablespoon butter
Cut bread into 1" cubes, place 1/2 in greased 13x 9 pan. Cut cream cheese into 1" cubes and dot over bread. Top with blueberries and remaining bread. In a large bowl beat eggs, milk and syrup. Pour over casserole. Cover and chill 8 hours or over night. bake 30 minutes covered, uncover bake another 25 min. (till browned and center is set)
