Easy Peasy French Dip Sandwiches

This is also my mothers recipe..One of my favorites growing up and I serve it to my family often

French bread loaf (1 or 2 depending on how many you need to feed) from grocery store
2 au jus dry seasoning packets
1 med roast beef (cooked and lightly seasoned) I usually season with seasoning salt and crock pot it all day
i package swiss cheese slices

cook au jus per package instructions in saucepan, I add juices from the roast beef to enhance the flavor.
Slice french bread in half lengthwise and broil on a cookie sheet to toast inside of bread.
Spoon au jus onto bread toasted side, load one side generously with pieces of roast beef, top with swiss cheese, then broil that side once more to melt cheese,
put top half on and slice into 6-8 sandwiches.. Serve with au jus in small ramekins for dipping..So yummy!!!

Sprinkle steaks with salt and pepper. Heat oil in skillet to almost smokig. Cook steaks in very hot skillet to desired doneness, browning sides. Remove steaks to a seving platter to keep warm. Pour off fat, and Add butter and shallots to the skillet, Add cognac and ignite it. after flame is gone, Add cream and bring to a boil, stirring constantly, about 5 minutes. remove from heat and stir in mustard. Serve sause with steaks.

Meatloaf

This is a basic meatloaf recipe with my addition of the cheese. It just gives the meatloaf more flavor - I have used cheddar, mozzeralla, swiss..whatever I have on hand

1 egg slightly beaten
1/3 cup milk
3/4 cup quick cooking oats
1/4 cup onion
2 tablespoons worshershire sauce
1 teaspoon salt
1/2 teaspoon rubbed sage
1/8 teaspoon pepper
1-1/2 pounds ground beef
1 cup shredded cheese (any kind will do)
1/4 cup ketchup
1/4 cup ketchup - to drizzle on top

In large bowl, combine all ingredients (except 1/4 cup ketchup). mix well. Press into greased 8 x 4 x 2 loaf pan. bake uncovered @ 350 for 1-1/4 hours. drain if needed. drizzle with left over ketchup and bake 10 minutes longer.
